About Cod:
Cod is in serious danger of being over-fished in many areas, including Great Britain, Canada and most other Atlantic countries. Because of this, other fish are being used more frequently in the place of cod, such as haddock, plaice and sea bass. If you can get hold of sustainable cod, try to make a point of using it in your cooking.
Cod is served quite frequently smoked or dried and is delicious either way. It's also wonderful simply battered and deep fried, creating a delicious meal of flaky fish. Cod is also frequently consumed in Spain and Portugal, commonly used in fish stews and starters.
