Baked Italian-Style Cod recipe

This is a wonderful recipe that produces a flaky, tasty fish. Try serving with some baby roasted potatoes roast them with rosemary for a delicious flavour.


4 skinless and boneless cod fillets
1 egg white
4 tbsp. dried breadcrumbs
2 tbsp. grated parmesan
1 tbsp. dry polenta
1 tsp. olive oil
½ tsp. Italian herbs
Pinch of salt
Pinch of pepper
¼ tsp. garlic granules
Drizzle of oil


  1. Preheat the oven to 230C/gas mark 8.

  2. In a shallow dish, mix together the breadcrumbs, parmesan, polenta, herbs, oil, salt, egg white, pepper and garlic granules.

  3. Drizzle the fillets lightly with oil and then put a spoon of the mixture on top of each fillet.

  4. Using your fingers, spread the crumb mixture evenly over the top of the fish.

  5. Bake in the oven for 12 minutes or until flaked.
