Cod with Cannelloni Bean & Chorizo Stew recipe

Chorizo and cod are surprisingly well matched and this lovely recipe is both hearty and warming. Add a chopped red chilli if you like things a little spicier.

Ingredients:

  • 4 cod fillets, skinned and boned
  • 2 x 400g tin cannelloni beans, drained
  • 100g chorizo sausage
  • 1 x 400g tin tomatoes
  • 200ml chicken or vegetable stock
  • 1 onion
  • 2 garlic cloves
  • Pinch each paprika, chilli powder, sugar, salt and pepper
  • 200g fresh spinach
  • 1 tbsp. olive oil

Directions:

  1. Thickly slice the chorizo. Slice the onion into half moons and mince the garlic cloves.

  2. Heat the oil in a large frying pan and add the chorizo. Cook until it begins to release its oils, then add the onion and cook for 5-8 minutes until softened. Add the garlic and cook for a minute or so, then pour in the tomatoes, stock, and cannelloni beans. Stir well and season with paprika, chilli powder, sugar, salt and pepper.

  3. Simmer for 5 minutes or so then stir in the spinach. Put the cod fillets into the sauce, making sure they are fully covered, then simmer for another five minutes or until flaking easily.

Use passata if you don't have a tin of chopped tomatoes in. This recipe serves 4.

I have now used this recipe many times and it is delicious, and everyone who has had it says the same. Do give it a try, you will not be disappointed.
