Beer-Battered Cod recipe

This is a great recipe for a deliciously crispy battered cod. Serve hot with salt and vinegar and some thick home-made chips.

Ingredients:

900g cod fillets, skinless and boneless
180ml beer
120ml milk
2 eggs
125g plain flour
1 tsp. baking powder
1 tsp. dried dill
Pinch of salt
2 litres of vegetable oil for frying

Directions:

  1. In one bowl, mix the flour, dill, baking powder and salt.

  2. In another bowl, whisk the eggs gently until no traces of egg white are left. Add the milk and beer and whisk well to combine.

  3. Slowly whisk the flour mixture into the wet mixture until no lumps remain.

  4. Dip the fish fillets into the batter mixture and then leave them to set for 15 minutes.

  5. Heat a deep fat fryer to 190C or pour the oil into a large frying pan and check the temperature with a deep-fry thermometer.

  6. Cook the fish in batches until golden brown and crispy. Drain the fish on paper towels before serving.
