Cheese, Spinach and Cod Bake recipe

This is a really quick, easy dish thatís sure to please the whole family. Cheesy, oozy and still containing one of your five a day, the bake is perfect on its own or with a big heap of mashed potato.


4 fillets of cod, skinless and boneless
285g cooked spinach
140g cheddar cheese
35g breadcrumbs
Salt and pepper
1 egg


  1. Cook the spinach by blanching it quickly into hot water and then squeeze dry.

  2. Mix the spinach in a large bowl with the egg, half the cheese, half the breadcrumbs and salt and pepper.

  3. Spread the spinach and cheese mixture over the bottom of a large baking dish.

  4. Lay the fish fillets on top of the mixture and then sprinkle with the remaining cheese and breadcrumbs.

  5. Season well and then bake for 20 minutes or until golden.
