Baked Cod & Chips recipe

Make this healthy version of the classic fish and chips next time you're fancying a treat but you don't want all of the fat and calories of a takeaway. Serve with bread and butter and lots of salt and vinegar.

  • 4 baking potatoes
  • 1 tbsp. olive oil
  • Pinch each salt, pepper, paprika, dried mixed herbs, chilli powder
  • 4 cod fillets
  • 1 egg
  • 2 tbsp. plain flour
  • 100g dried breadcrumbs
  • 1 tsp. mixed herbs
  • Salt and pepper

  1. Make the chips by chopping the potatoes into thin chips. Place them into a pan of cold water and bring to the boil, then simmer for 5-7 minutes. Drain and leave to air dry for a few minutes, then toss with oil, salt, pepper, paprika, herbs and chilli powder. Spread in a single layer on a baking tray and cook at 200C for 35-40 minutes until crisp and golden.

  2. Meanwhile, tip the flour into a shallow dish, beat the egg and put into another shallow dish and mix the breadcrumbs with the herbs, salt and pepper in another.

  3. Dip the cod fillets first into the flour, shaking to remove any excess, then into the beaten egg, then into the breadcrumbs. Place onto a baking tray. Cook for 10-12 minutes with the chips.

You can use haddock or plaice fillets if you don't fancy using cod. This recipe serves 4.
