Cod and Chorizo Parcels recipe

A delicious Spanish-style dish resulting in beautifully flavoured cod with chunks of spicy chorizo sausage. Perfect with a hunk of bread to mop up the juices.


4 skinless and boneless cod fillets
One chorizo sausage
1 red pepper
1 yellow pepper
1 tbsp. balsamic vinegar
Salt and pepper
Bunch of parsley


  1. Preheat the oven to 200C/gas mark 6. Cut out four squares of foil big enough to contain the fish and bits and pieces.

  2. Deseed both peppers and cut into strips. Get rid of the skin on the sausage and cut into little rounds. Finely chop the parsley.

  3. Lightly grease the foil and place the cod onto the centre of the foil. Scatter the chorizo, pepper and parsley over the fish.

  4. Season well with salt and pepper.

  5. Drizzle the balsamic over each fish fillet.

  6. Wrap up the parcel by crimping the edges of the foil together so that there are no air holes.

  7. Cook in the oven for 15 minutes or until flaking.
