Cod Boulangère recipe

This recipe makes for a delicious one-pot dish, with incredibly moist cod and tasty vegetables.

Ingredients:

4 fillets cod, skinless and boneless
300g frozen peas
750g potatoes
200g cherry tomatoes
400ml fish stock, hot
1 onion
Zest and juice of one lemon
Handful of chives
Few sprigs of thyme

Directions:

  1. Preheat the oven to 190C/gas mark 5. Grease a shallow baking tin.

  2. Peel the potatoes and slice them finely.

  3. Peel the onion and slice it to about the same thickness as the potato.

  4. Arrange the potato and onion in alternate layers on the bottom of the baking dish.

  5. Add the thyme and half of the chives between the layers.

  6. Mix the lemon juice and zest with the hot fish stock and pour the stock over the potatoes and onion.

  7. Cover the baking dish with foil and then bake in the oven for 35 minutes.

  8. Whilst the vegetables are cooking, prepare the cod by cutting it into large bite-sized chunks.

  9. When the vegetables are cooked, arrange the fish over the top of the dish, recover with the foil and cook for another 15 minutes.

  10. When the fish has been in the oven for 15 minutes, sprinkle the peas and the tomatoes over the fish. Season well and then return to the oven for a final ten minutes and then sprinkle with the other half of the chives to serve.

Nice idea sounded really nice, ingredients good and should of worked well together but a whole lemon is far to much in this recipe, only needs about a quarter of the amount would of been fine, otherwise ok.
