Cod Curry recipe

This spicy dish is a perfect use of cod – the meatiness and mild flavour of cod mean that it really works well in a curry. Serve with some plain basmati rice and a naan bread for a delicious meal.


4 cod fillets, skinless and boneless, chopped into chunks
1 onion
1 garlic clove
1 thumb-sized piece of root ginger
2 fresh green chillies
2 tins of chopped tomatoes
1 tbsp. lemon juice
2 tsp. ground cumin
2 tsp. ground coriander
1 tsp. cardamom
1 tsp. turmeric
Pinch of salt
Handful of fresh coriander


  1. Finely chop the onion and garlic. Mince the fresh ginger and deseed and finely chop the chillies.

  2. Heat some vegetable oil in a large frying pan and add the onion. Cook the onion for at least ten minutes or until browned but not crispy.

  3. Once the onion is cooked, add the garlic and ginger and cook for another minute.

  4. Add the fresh chillies, coriander, ground coriander, ground cumin, lemon juice, cardamom and turmeric. Season well with a good pinch of salt and cook the spices out for a couple of minutes.

  5. Add the two tins of tomatoes and scrape all of the bits off of the bottom of the pan.

  6. Bring the mixture to the boil and then lower the heat and simmer for 20 minutes.

  7. Add the cod pieces and cook for another 15 minutes or until the cod is starting to flake.
