Cod & Parsley Sauce recipe

A classic combination, cod and parsley sauce are a lovely match. Serve with spinach and creamy mashed potatoes, or if you want to serve it for a starter, just serve it as it is.


  • 4 cod fillets, skinned and boned
  • 1 tbsp. corn flour
  • Salt and pepper
  • 1 tbsp. olive oil
  • 1 tbsp. plain flour
  • 1 tbsp. butter
  • 200ml milk
  • 1 bunch of parsley
  • Fresh nutmeg to grate, optional


  1. Finely chop the parsley.

  2. To cook the fish: dust with corn flour and season with salt and pepper. Heat some oil in a frying pan and cook for 3-4 minutes on either side until crisp and flaking.

  3. To cook the sauce: melt the butter in a large saucepan until foamy, then add the flour. Stir until combined and cook for 3-4 minutes, stirring constantly.

  4. Gradually pour in the milk, stirring constantly, allowing the milk to absorb into the flour and butter until you add any more. Once the milk has all absorbed, season well with salt and pepper and add the parsley, then simmer until you're ready to serve.

Parsley sauce should be rich, but if you want to make it a bit lighter, use skim milk. This recipe serves 4.
