Cod & Potato Bake recipe

This one pot meal is a brilliant thing to cook if you're after a healthy, fast meal for the whole family - plus, you get to save on the washing up!


  • 250g jar roasted red peppers in oil, drained, oil reserved
  • 250g new potatoes
  • 2 cod fillets, skinned and boned
  • 1 red onion
  • 150g sugar snap peas
  • 150g mushrooms
  • 1 tsp. smoked paprika
  • Salt and pepper
  • Juice of 1/2 lemon


  1. Halve or quarter the new potatoes if they are particularly big, then place into a pan of cold salted water. Bring to the boil and then reduce to a simmer and cook for five minutes, then drain. Wedge the red onion and slice up the peppers. Quarter the mushrooms.

  2. Meanwhile, heat a little of the oil from the peppers in a large frying pan. Add the pre cooked potatoes, mushrooms and the onion and fry for 5 minutes until the potatoes start to turn crisp and golden.

  3. Add the peas and peppers and season with paprika, salt and pepper. Stir to combine.

  4. Put the cod fillets on top of the potatoes and veggies, season them and then cover with a big lid or a sheet of foil and cook for 5 minutes or so. Add lemon juice, and cook for another few minutes until the fish is flaking.

A lovely addition to this bake would be some diced chorizo or even a few good herby pork sausages - add any vegetables you fancy, really. Recipe serves 2.
