Cod with Pea Puree recipe

This is a great dish to serve as a starter at a dinner party or as a main course. Add crushed herby potatoes to make it a little bit more substantial.


  • 4 cod fillets, skinned and boned
  • 250g frozen petit pois
  • 1 small white onion
  • 2 tbsp. chicken stock (use water if you have no chicken stock and a good pinch of seasoning)
  • Salt and pepper
  • Olive oil


  1. Cook the peas in a pan of boiling salted water until tender, around 3-4 minutes. Meanwhile, finely chop the onion. Once the peas are cooked, add the onion back into the pan with them with the stock and a good pinch of salt and pepper. Stir just to warm them through then put into a blender and blitz until silky smooth.

  2. Cook the fish. Heat oil in a frying pan and season the cod fillets. Fry on each side for 3-4 minutes until flaking.

  3. Heat the pea puree in a small saucepan before serving on plates with the cod fillets on top.

A little bit of black pudding with the fish and the pea puree would be a lovely addition to this dish. This recipe serves 4.
