Cod with Croutons, Red Peppers and Goat's Cheese recipe

A one-pot meal suitable for the whole family - this meal also makes use of some super tasty jarred red peppers. If you don't want to use goat's cheese, use something milder like a soft cheese or a feta cheese.

Ingredients:

  • 4 cod fillets, skinned and boned
  • 250g jar roasted red peppers, drained
  • 100g ciabatta bread, torn into chunks
  • 1 red onion
  • 1 tsp. smoked paprika
  • 1 garlic clove
  • Small handful of freshly chopped parsley
  • 100g goat's cheese, chopped into chunks
  • Olive oil
  • Salt and pepper

Directions:

  1. Mince the garlic clove and thinly slice the red peppers. Cut the red onion into thin wedges.

  2. Heat the oven to 200C. Arrange the cod fillets in a roasting tin and drizzle with olive oil. Season with paprika, minced garlic and salt and pepper.

  3. Sprinkle with the chopped peppers, ciabatta and red onion. Cook for 5 minutes, then add the cheese and cook for another five minutes or so until the fish is flaking and the cheese has melted.

Use fresh red peppers if you don't have them jarred - just roast them in a hot oven until blackened, then put them into a bag for ten minutes before removing the skin. This recipe serves 4.
