Horseradish-Spiked Cod recipe

This is a brilliantly tasty, easy recipe that is so full of flavour you wont believe how quick it is to make. Serve the cod with some boiled new potatoes garnished with butter.


4 cod fillets, boneless but with skin left on
1 lemon
2 tbsp. fresh grated horseradish
Bunch of spring onions
Bunch of fresh parsley
50g breadcrumbs
Salt and pepper


  1. Preheat the oven to 220C/gas mark 6.

  2. Zest and juice the lemon into a small bowl. Add the horseradish and mix well, then season with the salt and pepper.

  3. Finely chop the onions and parsley and add them to the lemon and horseradish mixture.

  4. Add the breadcrumbs and mix again.

  5. Put the cod into a shallow baking dish with the skin facing down.

  6. Spoon the horseradish mixture on top of each of the fillets of cod.

  7. Bake in the oven for 15 minutes or until flaking.
