Lemon & Rosemary Cod recipe

Cod is really easy to jazz up and this simple herbed topping really makes it a little more interesting. Serve it up with some lemon mayo and some homemade chips.


  • 4 cod fillets
  • 100g dried breadcrumbs
  • Zest of one lemon
  • 2 rosemary sprigs
  • Salt and pepper
  • 1 tbsp. olive oil


  1. Finely chop the rosemary leaves. Mix in a bowl with the breadcrumbs, lemon zest, salt and pepper and olive oil.

  2. Put the fish fillets into a roasting tin and press the breadcrumb topping onto the top of the fish fillets. Cook in a 200C oven for 10-12 minutes until the fish is flaking and the topping is crisp.

If you don't want to use rosemary, use something like parsley or chives instead - both would be delicious. Recipe serves 4.
