Mini Cod Fritters recipe

This is a great way to use up leftover mash and the little cod fritters are actually a cinch to make. Serve them with a herby mayo or a zesty salsa to dip.


  • 250g cooked cod, flaked and boned
  • 250g mashed potatoes
  • Small handful freshly chopped parsley
  • 60ml milk
  • 1 small onion
  • 2 large eggs
  • Salt and pepper
  • Oil spray


  1. Finely chop the onion. Mix in a bowl with the cod, mash, parsley, milk, beaten eggs and salt and pepper. Shape into small fritters or alternatively you can drop the mixture by the spoonful into the oil.

  2. Heat the oil in a large, heavy bottomed saucepan until a chunk of potato dropped into the oil turns brown within 60 seconds. Drop the fritters into the oil and fry until golden brown, then remove from the oil and drain on kitchen paper.

Try adding capers to these fritters for a bit of bite. Recipe serves 2, or 4-6 as a starter.
