Olive, Caper & Tomato Cod recipe

This dish has loads of punchy flavours but is a cinch to make and prepare - cod fillets are baked in a simple tomato, olive and caper sauce. Make it a meal by serving with some roast potatoes, chips or crusty bread - you could also serve it with a big mixed salad.

Ingredients:

  • 4 cod fillets, skinned and boned
  • 1 x 400g tin chopped tomatoes + 200ml chicken, fish or veggie stock
  • 2 garlic cloves
  • 150g mixed olives, pitted
  • 2 tbsp. capers, drained
  • Salt and pepper
  • Handful fresh basil leaves
  • Olive oil

Directions:

  1. Heat the oven to 200C. Mince the garlic cloves and cook them for a few minutes in a dash of oil just so that they are not raw.

  2. Mix the garlic with the tomatoes, olives, capers, salt and pepper and simmer for 15 minutes.

  3. Pour the sauce into a roasting dish and pop the cod fillets on top of the sauce.

  4. Cook for 10-12 minutes or until flaking, then rip the basil leaves and add these to the dish to serve.

Garlic bread would be especially delicious to eat with this dish to mop up all the juices - but if you don't like garlic bread, just use plain ciabatta. This recipe serves 4.

Easy to make and tastes good - I added onion and dried oregano with a dash of tomato purée to make it even better!
