Pesto Crusted Cod recipe

Pesto and olives are mixed with breadcrumbs to create a quick and easy herby topping for lovely flaked cod. Serve with homemade wedges or chips and a big green salad for an easy, healthy dinner.


  • 3 tbsp. green pesto
  • 10-12 green olives, pitted, or 2 tbsp. jarred olive tapenade
  • 4 cod fillets, skinned and boned
  • 100g dried breadcrumbs
  • 1 tbsp. olive oil
  • Salt and pepper


  1. Mix the pesto with the breadcrumbs in a bowl. Finely chop the olives and add these or stir in the tapenade and stir in the oil. Season with salt and pepper.

  2. Arrange the cod fillets on a non-stick baking tray. Top with the breadcrumb mixture and bake for 10-12 minutes in a 180C oven.

If you don't want to use pesto, use a handful of fresh parsley and a tbsp. of pine nuts. Just add a little more oil to bind the topping. Recipe serves 4.
