Creamy Prosciutto Wrapped Cod Fillets recipe

This cod and prosciutto bake is Italian in flavour and tastes wonderfully rich. Serve it with some baked ciabatta bread.


  • 4 cod fillets, skinless and boneless
  • 4 large slices smoked prosciutto ham
  • 4 tbsp. green pesto
  • 250g creme fraiche
  • Handful freshly grated parmesan cheese, or cheddar
  • 2 tbsp. pine nuts
  • Salt and pepper


  1. Wrap the cod fillets in the prosciutto.

  2. Mix the creme fraiche in a bowl with 3 tbsp. of pesto and most of the cheese. Season well.

  3. Arrange the cod fillets in a roasting dish and dollop the creme fraiche mixture around the fish. Dot the rest of the pesto over the fish and sprinkle with the rest of the cheese.

  4. Bake in a 180C oven for 10 minutes. Add the pine nuts, and cook for another 5-10 minutes until the fish is flaking.

Add 200g spinach to the sauce for extra flavour. This recipe serves 4.
