Roast Cod with Salsa Verde recipe

Salsa verde is a fancy sounding sauce but it's actually very simple to make - it's a little like an Italian pesto. This simple dish really lets the flavours of the cod shine through.


  • 4 cod fillets, boned
  • 2 tbsp. oil
  • Salt and pepper
  • Large handful parsley
  • 2 tbsp. capers, drained
  • 1/2 red onion
  • 1 large garlic clove
  • 1 tbsp. Dijon mustard
  • 125ml extra-virgin olive oil


  1. Put the cod onto a non-stick baking tray, skin side up and brush with oil before sprinkling with salt and pepper. Cook in a 220C oven for 8-10 minutes until crisp.

  2. Finely chip the parsley, red onion, capers and garlic clove together on a board. Put into a bowl and stir in the mustard and oil. Season with salt and pepper. If you want to, whiz the ingredients for the salsa verde in a blender, but it is nice to keep it chunky.

Make the sauce with a few chives or some coriander for a different flavour. Serve it over the cod. Recipe serves 4.
