Simple Salsa Baked Cod recipe

This is a lovely warming, healthy dish that you can rustle up in no time at all - serve with potatoes, or just some warm crusty bread to mop up all the juices.

Ingredients:

  • 4 cod fillets
  • 1 red onion
  • 1 x 400g tin chopped tomatoes
  • Small handful freshly chopped parsley
  • Pinch each sugar, salt and pepper
  • Juice of half a lime
  • 1/2 tsp. chilli powder
  • 2 tsp. olive oil

Directions:

  1. Finely chop the red onion. Fry in the oil for around 8 minutes until softened and browned, then add the tomatoes, parsley, lime juice, sugar, salt, pepper and chilli powder. Simmer for about ten minutes until thickened.

  2. Place the cod fillets into a roasting dish and cover with the salsa.

  3. Cook in a 200C oven for 5-10 minutes until flaking. Serve.

If you don't have the ingredients in to make a fresh salsa, just use a 400g jar of ready-made salsa. Recipe serves 4.

Absolutely lush!! Very easy I added more chilli as I love spicy food and also used lemon thyme instead of parsley.
